Start by bringing a pot of water to a boil. Once the water is boiling, add udon noodles to the pot and let them cook for 6-7 minutes.
Once the noodles are fully cooked, drain and rinse them in cold water.
Add sliced shiitake mushrooms and carrots to the pot and let them cook.
For a traditional miso udon broth, simmer miso paste with dashi powder, water, and soy sauce for 10 minutes.
Add the shrimp to the pot and let them cook for further 3minutes.
To serve, ladle the miso broth over the noodles and garnish with sliced tofu, egg, kamaboko, nori seaweed, and sesame seeds if desired.
