To make Easy Miso Udon, you will need:
- 1 pack of fresh or dried udon noodles
- 250ml of water
- 1 tablespoon of dashi powder
- 2 tablespoons of miso paste
- 1 tablespoon of soy sauce
- 1/2 cup of sliced shiitake mushrooms
- 1/2 cup of sliced carrot
- 1/2 cup of sliced green onions
- Optional toppings: sliced tofu, shripms, sliced kamaboko (fish cake), nori seaweed, and sesame seeds.

- Start by bringing a pot of water to a boil. Once the water is boiling, add udon noodles to the pot and let them cook for 6-7 minutes.
- Once the noodles are fully cooked, drain and rinse them in cold water.
- Next, add sliced shiitake mushrooms and carrots to the pot and let them cook.
- For a traditional miso udon broth, simmer miso paste with dashi powder, water, and soy sauce for 10 minutes.
- Finally, add the shrimp to the pot and let them cook for further 3minutes.
- To serve, ladle the miso broth over the noodles and garnish with sliced tofu, egg, kamaboko, nori seaweed, and sesame seeds if desired.
