Coconut soup is a great way to refresh and hydrate your body in a hot and hazy weather. Not only is it suitable for everyone, it is also a perfect meal for little ones since coconut provides many essential nutrients for their growth and development.
What are the ingredients?
- 2 Thai young green coconuts (coconut water and meat), you may get it from morning market or Fairprice NTUC.
- Water (150ml, based on the amount of coconut water)
- 5 slices of ginger
- 5 no-seed red dates
- Half kampung chicken
- 5 pieces of codonopsis root
How to cook?
- Cut the top off the young green coconuts and pour the coconut water into a pot. Scoop out the coconut meat and set aside.
- Clean and prepare the half kampung chicken, and bring it to a boil to remove the first layer of oil.
- Add water to the pot, based on a 1:1 ratio with the amount of coconut water you have. Add the ginger, red dates, chicken, coconut meat and codonopsis root to the pot.
- Let the soup simmer for about 1 hour, or until the chicken is cooked through and tender.
- Serve hot and enjoy!

Note :
For this , I have no added any salt sugar , the soup is hit the spot and it was so so so so refreshing.Above recipes can make it about 5 soup bowls. We finished the soup and my husband still ask for more 😂
